Black tea is fully oxidized, producing a hearty deep rich flavor of amber-colored tea. It is the most popular style of tea in most western countries and is used in many blends such as Earl Grey, English Breakfast, and Chai.
Many tea countries around the world produces black tea. The two highest-producing black tea countries are China and India

Chinese black tea, known as red tea in China, can be confusing due to the variety of names given. Part of the problem in recognizing Chinese teas is their complicated terminology and classification.
All black teas are made from completely oxidized tea leaves. With Chinese black teas, the leaves are slowly withered and oxidized, coaxing out a softer, more fragrant tea than the strong astringent tea famous in the other major black tea-producing countries. The Chinese also favor unblended whole loose-leaf tea.

Chinese black teas are mainly produced in the southern provinces of China, including Anhui, Fijian, and Yunnan. Chinese black teas are very different than black teas from India with a much mellower flavor and rarely require the addition of milk and sugar, although you certainly could add milk or sugar. Chinese black tea is sometimes called red tea.
Many of China's fine teas are still made by hand, preserving the skills needed to manufacture such extraordinary teas

Mao Feng is the most famous black tea from Anhui 安徽 China along with Hao Ya, Gongfu, and Xin Ya.
Lapsang Souchongh and Panyong Congou from Fujian are also highly sought out, varieties includeZheng Shan Xiao Zhong,Yan Xiao Zhong, Golden Monkey & Golden Needle

The caffeine and polyphenols can vary widely, but white tea does contain caffeine.
The exact amount of caffeine in any tea will vary depending on the processing methods, along with the amount of leaf used in brewing and the length of time the leaf is infused in the water.
As a reference, black tea is reported to have about 40 mg of caffeine per cup. This is half the amount of caffeine as a cup of coffee.

Black tea carries a range of aromas and flavors, depending on the area it was grown in, how it was processed and if any flavorings are added to the tea. These are the words used to describe how black tea smells and taste... There are many different ways to brew Black/Red tea to draw out the flavors, especially with Pu'er. See our Brewing section in the Academy. Generally bring water to a boil, rinse and pre-heat your teacup, pour the water over the tea
